Fresh Italian salad

We walked up the narrow cobblestone road towards the cafe our driver had recommended, then turned to see the amazing view of the Chianti hillsides from San Gimignano.  Ah, Tuscany at it’s best and I was in love with this place!

Like every other American girl out there, I dreamed of visiting Italy after seeing the movie Under the Tuscan sun.  It was so gorgeous and romantic – I mean, who doesn’t want to go there, right?  When I finally made the trip – years after the movie came out – I was awestruck by the beauty of it all  It was more than I had even imagined.  And I dreamed of this a lot!

I ordered this salad in that tiny little cafe in Tuscany and I can’t quite say for sure if it was the fresh flavors of sheer simplicity, the ambiance of it all or the dream-like state I stayed in the whole time we were there….but this was fabulous.  And, Italians know how to eat.  One small, slow course at a time – savoring and lingering over their meals, cherishing the time spent with loved ones.  We could learn a lesson from their lifestyle.

I make this dish often because it’s easy, beautiful and delicious.  If you love homegrown tomatoes as much as I do, this will soon become your go-to starter as well.  I love this dish!!

Tomato gorgonzola salad

Ingredients:

  • 3-4 large tomatoes
  • 1 small red onion, sliced thinly
  • 1/2 cup gorgonzola or roquefort cheese, crumbled
  • fresh herbs (thyme, oregano, parsley, basil, etc.)
  • juice from 1/2 lemon
  • extra virgin olive oil

Directions:

  1. Slice tomatoes and arrange on a nice platter.  Scatter onions, cheese and fresh herbs over tomatoes, then sprinkle with fresh lemon juice and olive oil.  You can use a light vinaigrette instead.  Salt and pepper well – the tomatoes need it.

  2. I set the cheese out to warm up a bit before I assemble this, doesn’t really matter for the tomatoes.  I love this topped with fresh thyme and/or oregano and it is SO gorgeous for company.
