Fresh green beans with bacon

I love fresh green beans picked from the garden, but they are readily available at most grocery stores year round as well.  I make them pretty often because Judd likes them.  Actually, they are the only green thing he will eat.  I know, weird, right?  I’ll eat anything and he is a meat and potatoes man.  Of well, just more for me.

I make my green beans with bacon, shallots and mushrooms and saute/steam them till almost done.  They are not the true southern style like I grew up with with ham hocks and new potatoes (I should do another post on those -yum!) cooked till very tender, but still excellent home-style taste.

Ingredients:

  • 1 lb fresh green beans
  • 2 medium shallots, thinly sliced
  • 1 lb mushrooms, sliced
  • 4-5 slices of bacon, diced
  • water

Directions:

  1. Wash green beans and snap off/cut stem or bad ends, then snap into smaller pieces.

  2. Add bacon pieces to skillet and cook till crispy.  Add shallots and mushrooms to skillet and stir, then add green beans, garlic salt/pepper and 1/4 cup water.  Cover, turn to medium-low heat and let steam, turning the beans over and over as they cook, getting most of the goodies on the bottom mixed in well.

  4. Cooking the green beans this way creates a very easy dish with a real home-style flavor.  Everyone raves about these when I make them.  You will love them too.
