Cabo’s Amazing Beer Margaritas

This great recipe comes from my girlfriend Carol, aka Cabo Wabo…no, not the Cabo Wabo in Cabo San Lucas…that’s her…pet name…  A group of girls that I’ve worked with over the years get together for dinners, happy hours and extremely interesting road trips and somewhere along the way everyone got a nickname.  Lots and lots of nicknames, most of which cannot be repeated in certain company…..So, Carol’s initials were COB and well, calling her a Cobb salad just didn’t sound right.  So, she became Cabo Wabo.  She does make these amazing margaritas after all!!  What else were we going to call her??  Nevermind that…

I have had many, many parties at my house where I serve up pitchers of these beer margaritas and everyone loves them.  They should probably be called sneaky margaritas because you don’t taste the tequila, they are very smooth and….well, you know the rest.  When one pitcher runs out, just stir up another one real quick while you are entertaining in your kitchen because that’s just where everyone ends up!

So, invite a few friends over, put out some ‘snacky stuff’ and turn the music up loud!!  Make sure you have a pitcher of these in your fridge…and always wear your flip flops…in this event, make sure they have lots of glitter and bling……

Cabo’s Amazing Beer Margaritas

  • Difficulty: easy

Ingredients:

  • 1 large can Limeade
  • Tequila, cheap brand works fine
  • Cointreau or Gran Marnier
  • 2 beers, any kind will do
  • limes and salt

Directions:

  1. Get a nice, pretty pitcher out and lots of margarita glasses.  Pour kosher salt on salad plate and slice a lime in nice thin circles.

  2. Pour the limeade into the pitcher. I put my limeade in the fridge so it pours instead of frozen.

  3. Into the pitcher add…one can water and one can tequila.

  4. Add a splash of Cointeau to your liking.

  5. Pour 2 beers into pitcher and stir lightly.

  6. Wipe the glass rim with lime, dip glass in salt, add a pretty little lime slice to edge, add ice and pour margarita into glass.  Instant party in a glass.

  7. Enjoy!!
