Buffalo chicken dip

Creamy gooey goodness!

Oh my, this is a good dip. It’s that perfect mixture of melted, gooey, creamy cheeses with a bit of buffalo sauce heat on a salty crunchy Frito!  Wow…..I get excited making it because I love, love, love it so.  And, of course it is crazy easy to make or I wouldn’t be bothered by it taking up too much of my time.  Every single time I make this everybody raves about this dip and asks for the recipe.  I always go home with an empty platter.

I first tasted this at my girlfriend Becky’s Barn Bash Party.  Becky and Boy Kelly (not to be confused with girl Kelly…another whole story of it’s own) own a ranch outside of Pearland Texas and each year they have a big party in their barn.  Well Becky told me straight on that I had to try this dip, that her daughter’s mother-in-law made it and it was supposed to be really good.  That was the beginning of the end for me.  I ate this chicken buffalo dip with Frito’s (OMG!!) and it was SO good, so gooey and cheesy and I adored that hot sauce thing, that I had to make myself step away from the table….3 times!!!  It is worth every last calorie….Oh, but wait, I make it with that reduced fat Neufchatel cream cheese (whatever that stuff is, y’all know) so it’s almost calorie free…almost.

Buffalo chicken dip

Ingredients:

  • 8oz cream cheese, softened
  • 12oz can cooked chicken, drained
  • 1/2 cup buffalo hot sauce
  • 1/2 cup ranch dressing
  • 2 cups grated cheese, cheddar or colby/jack
  • Frito Scoops

Directions:

  1. Spread the softened cream cheese in the bottom of a baking dish, break up chunks of chicken and evenly drop over cream cheese.  Mix the buffalo sauce and ranch dressing together and pour evenly over cream cheese and chicken.

  2. Top with grated cheddar cheese.  I used the Colby jack mix i think, but hey,  it’s cheese…it’s all good. I usually make this in one really cute little dish, but this time I made 2 because we only had 2 other people coming for dinner and I did not want to embarrass myself by eating most of the dip…so I saved the other one for later…for me.  See?

  3. If you can wait, bake at 350 till bubbly….but I’m a tad bit impatient, so I have found it comes out just nice and hot from the microwave.  You really just have to melt all the cheeses, right?
