Delicious Easy Chicken Tacos

These chicken tacos are so simple and tasty that you almost feel like your cheating. Almost.

So, you know you’re having company over tomorrow night and you have no time because you have to work and who wants to come home and cook after working all day??  No one I know.  With this dish, you just throw everything in the crock pot/slow-cooker and when you get home from work, the air is filled with this wonderful aromatic scent.  All you have to do is get the sides together and dinner is ready.  You can also assemble the night before, put in the fridge, then turn the slow cooker on as you leave for work.  It doesn’t get any better than that.

Also, I don’t see any reason that you can’t make this on the stove too.  I would saute the chicken pieces in a bit of oil till almost brown, then add the salsa and taco seasoning and simmer for 30-45 minutes or until done.  Easy, easy, easy.  Either way.

Pick up some tortillas, cheese, sour cream, whatever you like.  I served this with Charro Beans, Spanish Rice and quick onion topping.  Don’t forget to make the Beer Margaritas and wear your flip flops after that long day in the office!  Enjoy!!

 

Easiest Chicken Tacos

Ingredients:

  • 3 lbs chicken breast & thigh, boneless
  • 1 16oz jar salsa (I used Pace medium)
  • 1 pkg taco seasoning

Directions:

  2. Cut the chicken into approx. 1 inch/bite-size cubes.  Coat inside of slow cooker with baking spray and add chicken.

  3. Mix salsa and taco seasoning in a bowl and pour over chicken, and then mix the sauce in a bit to coat the chicken pieces.  Cook for 4 hours on high or 6-7 hours on low.

  4. The sauce cooking with the chicken became very, very flavorful and I only added a bit of salt and garlic powder because that’s what I like.  Totally scrumptious.   It was so good that now I’m thinking of a chicken tortilla/taco soup I can make from this….coming soon…

  5. Also, if you don’t want this much sauce, feel free to cut back on the salsa.
